Ingredients

  • A small cucumber
  • 1/2 cup of chickpeas
  • a cup of cherry tomatoes
  • 1/2 cup of brown rice
  • a handful of fresh parsley
  • 1/2 cup of green and black olives
  • 3 tablespoons of extra virgin olive oil
  • salt
  • pepper
  • an avocado
  • a slice of lemon
  • carrot and celery sticks
  • 3 tablespoons of hummus (chickpea paste sauce and flavored sesame seeds)

Preparation

  1. For the vegan salad: chop the cucumber, cut the tomatoes in half, add the cooked whole rice, the chickpeas, the chopped fresh parsley, the green and black olives, a drizzle of extra virgin olive oil, salt, pepper and mix the all.
  2. Cut the avocado in half, peel it and add the lemon wedge next to it.

Ingredients

  • A chicken breast
  • a cup of cherry tomatoes
  • 2 boiled eggs
  • an apple
  • a teaspoon of fresh oregano
  • 3 tablespoons of extra virgin olive oil
  • 1/2 lemon
  • salt
  • pepper
  • a tablespoon of almond butter

Preparation

  1. To roast the chicken breast: preheat the oven to 220°C/425 F and cover a baking sheet with wax paper.
    Season the chicken with oil, lemon juice, salt, pepper and oregano.
    Put on the baking sheet and cook for 15-20 minutes.
  2. Cut the chicken and add the tomatoes previously seasoned with olive oil, salt and a bit of oregano.
  3. Slice the boiled eggs, the apple and add (to taste) a tablespoon of almond butter.
  4. Place everything in a lunch box with compartments.
    It is preferable to use the glass one because, during the heating of the food in the microwave, the containers of this material do not release chemical substances as instead those of plastic can do.

  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • salt
  • pepper
  • a slice of bread
  • red and green grapes

Preparation

  1. Slice the tomatoes and the mozzarella.
    Put everything in the glass container with compartments and metal cutlery.
  2. Add the pesto on top, a handful of pine nuts and decorate with fresh basil leaves.
  3. Prepare the dressing in a small glass jar: mix oil, vinegar, salt and pepper.
  4. Toast a slice of bread and add it with the olives in another compartment.
    In the last place the washed grapes and the jar of the seasoning.

  • an apple
  • a tablespoon of almond butter

Preparing this packed lunch is very simple, you don’t have to cook anything!

Preparation

  1. Put the yogurt in a BPA-free food container, mix with the mix of nuts and a little honey (to taste).
  2. Slice the apple and add the almond butter.
  3. Place the fresh fruit in small pieces inside the reusable biodegradable bags and voilà lunch is served!
